WINEMAKING We do a green harvest to promote concentration and maturation of the grapes that remain. The harvest date is de ned according to the tasting test results. The harvest date is defined according to the tasting test results. It generally begins at the end of April. Total maceration for over 7 weeks. Malolactic fermentation in oak barrels followed by 12 months aging in these same barrels. Ageing 14 to 16 months in French (85 %) and American (15 %) oak barrels with regular racking. 50 % first wine and 50 % second wine barrels.
TASTING NOTE Nose: Elegant nose embellished with spice from cloves and grilled notes of coffee and vanilla. Palate: complex with great volume, a full body and a big tannic structure. The notes of vanilla and spice blend together giving a finish which is long and fruity
