Description 100% from agave Espadin. The pinas (heart of the agave plant) are baked in rock ovens (large, 8-12ft diameter/6ft deep, rock-lined conical pits in the ground), and then mashed in a large stone wheel attached to a post that is pulled around by horse, donkey or mule. Once mashed completely, the product is placed in large wooden vats to be fermented for two days. The distillation is in cooper pot still, Mezcal San Cosme has double distillation, taking out the heads and tails. Agave’s plant average age: Nine year old pinas. White Mezcal is un aged, is also called young because it is bottled after filtration and proof.
