A Round Turn is the most simple knot, one complete turn of a rope around an object. Despite its simplicity, it is immensely strong and effective, used to hold even great ships against a dock. But its strength relies on a person holding one end of the rope and applying tension, allowing the forces of friction and torque to work. Distilling is simple, just condensing vapor back to liquid. But with a person applying their senses of smell and taste, this simple process can be harnessed to produce something complex and sublime.
Located in a 150 year-old textile mill on the Saco River 5 miles from the Maine coast, Round Turn Distilling embodies the pragmatism and industriousness of its New England forebears. While the mill once used the waters of the river to power its massive looms, Round Turn uses steam to power its modern, steel and copper still. The still is itself an embodiment of tradition informed by innovation. Built in Etna, Maine, by Trident Stills, it blends the basic principles of the centuries-old pot-still with modern innovations and efficiencies. After all, tradition was once innovation in its time.
Native Mainers Darren Case and Kristina Hansen returned back home from Brooklyn, NY, in 2014 to start Round Turn Distilling. They were drawn by the community of artists and entrepreneurs in Biddeford, a culture very similar to Brooklyn's. Their passion is the moments that bring friends and family together, often gathered around a plate or bottle. They work hard to produce quality spirits worthy of sharing those moments.

BIMINI GIN
Bimini Gin is inspired by warm sunny days. With the clean citrusy flavor of grapefruit zest, coriander, and hops, it's perfect for those refreshing drinks we crave in the summer and that help us imagine warm weather in the winter. Handcrafted and hand-bottled, Bimini is a modern American gin that's perfect for your favorite cocktail. Try substituting Bimini Gin for light rum in your favorite tropical drinks. 

Botanicals: Juniper Berries, Coriander Seeds, Mt. Hood Hops, Grapefruit Peel, Aromatic Barley Malt, Chamomile, Orris Root
Base Spirit: 100% Neutral Spirits Distilled from Non-GMO Illinois Corn

​BIMINI COCONUT
We were inspired to create Bimini Coconut after observing our friends frequently pair our gin with coconut and other tropical flavors. Using the same techniques, we infuse all-natural coconut into our original gin to create a taste best described as “Bimini on Vacation.”

Unlike many flavored spirits, Bimini Coconut does not contain any flavor extracts. Instead, we use organic Fair Trade Certified Extra Virgin coconut oil in a process know as “fat washing.” The oil is heated to a liquid state and combined with our original gin to infuse it with pure coconut flavor. After the infusion has completed, the mixture is chilled until the oils solidify and can be strained back out. The result is a subtle, natural coconut aroma and flavor in perfect harmony with our other botanicals.
Use in any gin cocktail. We highly recommend trying it in a Negroni or Gimlet!

BIMINI BARREL RESERVE NO. 1
Just like days when you need a sweatshirt on the beach, we’ve added a layer of warm and comforting flavors to our original gin. The gin is barreled at full distillation strength (180 proof) for three months in three different kinds of twice-used barrels: Ex-bourbon Apple Brandy, Ex-bourbon Rum, Ex-bourbon Sea Salt. The results are blended and diluted to 101 proof and rested in stainless steel for six weeks before bottling. As it is bottled unfiltered, harmless natural sediment or suspended solids may occur; simply shake to redissolve.

Without the heavy oak and char qualities of new barrels, the familiar botanical notes of Bimini Gin are enhanced rather than overshadowed. The citrusy notes of hops and grapefruit are intensified with hints of salinity. The juniper upfront mingles with tree fruit in the middle palate and then subsides into a lingering caramel and vanilla finish.

BIMINI OVERPROOF
Bimini Overproof has more flavor than regular Bimini Gin because none of the botancial oils are filtered out. Why is regular Bimini Gin filtered? Oils dissolve in alcohol, but they separate from water. When we dilute the original Bimini Gin to 94 proof, the botanical oils begin to fall out of solution making the gin appear cloudy. We didn’t think the world was ready to buy a bottle of cloudy gin, so we filtered out just enough oil to keep regular Bimini Gin clear at room temp. 

At 111 proof, Bimini Overproof stays crystal clear at room temp with no filtration necessary. This means every drop of flavor we’ve extracted from our botanicals goes into the bottle.

Filtration removes more of some botanical oils than others, which means Bimini Overproof has a different balance of flavors than regular Bimini Gin. In particular, the juniper is more robust upfront and the hops more clearly defined in the middle palate
