Distillers of eaux-de-vie since 1850, the expertise of the Merlet family was built over five generations. Under the leadership of Gilles Merlet and his sons, the house has diversified its range: fruit liqueurs, cognac and Pineau, multiple and creative reflections of this long experience.

Category : Fruit Liqueur Variety of fruits : Griotte, oblacinska Degree : 24 % vol. Merlet’s Soeur Cerise reinvents a great classic, Cherry Brandy. The Merlets source different varieties of cherries, including Morellos, for their wide aromatic range. This liqueur is produced using various traditional methods. The cherries are first soaked in pure alcohol to extract all their flavours, then pressed and filtered. This natural fruit infusion is blended with cherry distillate – for more powerful aromas -, cherry juice – for fresh cherry notes and some acidity – and a little bit of cognac for more depth and complexity. Sugar is then added to obtain the final liqueur. Complete control of every stages of the process, from sourcing the fruits and selecting only the ripest to their transformation by Merlet, guarantees, together with the very high concentration of macerated fruits, the intensity and aromatic freshness of this brandy, made according to an exclusive recipe. SERVICE: Merlet Sœurs Cerises can be enjoyed neat, on ice or in cocktails as the Singapore Sling or the Blood and Sand. TASTING NOTES: Colour: Deep crimson with purple hue Nose: Powerful sour cherry aromas, subtle notes of almond and cherry kernels. Palate: Ripe, almost stewed, cherry aromas dominate, followed by a refreshing tanginess. Lengthy finish thanks to the cognac. C² CAFÉ, COGNAC & COFFEE LIQUEUR
Category : Liqueur Degree : 33 % vol. Cognac & coffee liqueur calls on Merlet’s expertise as both distillers and liqueur-makers, and showcases two after-dinner classics. Merlet partnered with Merling, a local coffee roaster from La Rochelle to select the origin and variety of the coffee (Brazilian Arabica) but also to work directly with freshly roasted coffee. The coffee is roasted and ground on the day and immediately infused in hot water. The coffee infusion is then stabilized by neutral alcohol and filtered. It’s blended with cognac (minimum 50% of the alcoholic components). Lastly, sugar is added to obtain the final product. The aromatic intensity is exceptional, and the low level of sugar means that the natural bitterness of the coffee is preserved so that it can be enjoyed neat or on the rocks. Many other uses are also possible. SERVICE: C² Café & Cognac can be served either on the rocks with an orange zest, a cinnamon stick or a square of chocolate, or as a long drink with soda water or tonic. TASTING NOTES: Colour: Deep and intense brown Nose: A powerful nose with warm coffee, toasted bread and vanilla, followed by the cognac, softly complementing the aromatic palette. Palate: Well-rounded and smooth, with a nice length. The flavours of coffee, spice and vanilla clearly shine through and are wonderful enhanced by a little bit of cocoa. The cognac and the coffee liqueur are perfectly matched. CRÈME DE MELON, CANTALOUPE LIQUEUR

Merlet Cantaloupe liqueur (Crème de Melon Charentais) pays tribute to a local variety, renown for its quality and now produced in different regions. The Merlets source their fruits from partner producers who grow their melons a close distance from the distillery, which allows for perfect control of the quality of the product. Thanks to their position as currant growers and winemakers, the Merlets are able to exchange with their partner producers and call on their own expertise to select fruits of optimal ripeness. The flesh of the melon is soaked in pure alcohol to extract all its flavour, then pressed and filtered. Sugar and a touch of Pineau des Charentes are added to this natural fruit infusion to obtain the Crème de melon. Complete control of every stages of the process, from sourcing the fruits and selecting only the ripest to their transformation by Merlet, guarantees, together with the very high concentration of macerated fruits, the intensity and complexity of the final product. SERVICE: Merlet’s Crème de Melon Charentais is enjoyed on the rocks, with soda water or in the French tradition with wine or Champagne. TASTING NOTES: A subtle and delicate nose, that will remind you of a freshly cut melon on your summer table, with a good rosé on the side. A complex blend of green tea, mango and very ripe Muscat. On the palate, the freshness of the melon is stunning, with a strikingly lengthy finish. LUNE D’ABRICOT, APRICOT BRANDY
Category : Fruit Liqueur Variety of fruits : Roussillon apricots Degree : 25 % vol. Merlet’s Lune d’Abricot reinvents a traditional product, Apricot Brandy. The Merlets source different varieties of apricots from partner producers in Roussilon to guarantee consistent quality. Thanks to their position as currant growers and winemakers, the Merlets are able to exchange with their partner producers and call on their own expertise to select fruits of optimal ripeness. The apricots are soaked in pure alcohol with some of their kernels to extract all their flavours, then pressed and filtered. This natural fruit infusion is then blended with a little bit of young Cognac for more depth and complexity, before sugar is added to obtain the final liqueur. Complete control of every stages of the process, from sourcing the fruits and selecting only the ripest to their transformation by Merlet, together with the very high concentration of macerated fruits, convert this brandy, made according to an exclusive recipe, into a product of many uses. SERVICE: Merlet Lune d’Abricot delivers such intensity and a labyrinth of aromas, this makes vibrating some of the greatest cocktails as the Sidecar of the moon, Charlie Chaplin and Nacional Daiquiri. TASTING NOTES Colour: orange-tinged yellow. Nose: Sophisticated and powerful apricot, with notes of spice, wood, wild flower, exotic fruit (mango) and a hint of almond. Palate: Smooth and lively, with notes of honey (acacia, lime flower), apricot pulp and hints of citrus (lemon, orange). Very long finish, with slight notes of honeysuckle and bitterness. Generous, rich, unctuous and even dry. TROIS CITRUS, TRIPLE SEC LIQUEUR
Category : Fruit Liqueur Variety of fruits : Bitter orange, blood orange, lemon Degree : 40 % vol. Trois Citrus is Merlet’s reinterpretation of the traditional triple sec orange liqueur. The Merlet family worked with one of the greatest bartenders of the world, Tony Conigliaro, to create a perfect cocktail product. Trois Citrus is made with three varieties of citrus: bitter orange, blood orange and lemon. The peels of the citruses are separately macerated in pure alcohol. Most of them are then distilled. The distillates are blended with the non-distilled macerations. A minimal quantity of sugar is added to obtain the final product. The different citruses offer a unique complexity, while low sugar levels allow use in dry cocktails. The high proof of the product makes it possible for bartenders to use it as the base spirit. Thanks to the bitter touch of the non-distilled macerations, the palate appears dryer and the finish is longer. SERVICE: Merlet Trois Citrus is a perfect ingredients for classic cocktails classiques such as the Margarita, the Sidecar or the Cosmopolitan. Colour: Clear with pale silver straw tinges.
