Distillers of eaux-de-vie since 1850, the expertise of the Merlet family was built over five generations. Under the leadership of Gilles Merlet and his sons, the house has diversified its range: fruit liqueurs, cognac and Pineau, multiple and creative reflections of this long experience.

V.S. COGNAC
Category: Cognac Degree : 40% vol. For their Merlet VS Cognac, Gilles and his sons selected and blended eaux-de-vie from different regions of the cognac appellation, to ensure consistent quality. The eaux-de-vie were aged for at least two years. The Cognacs selected for this blend are light and easy to approach, mostly from Fins Bois ‘crus’, but also from Bons Bois and a little bit of Petite Champagne. Depending on the blends, other ‘crus’ eaux-de-vie distilled by Merlet can be called upon. The Merlet VS Cognac is slightly woody and delicately fruity. SERVICE: The Merlet VS cognac ideally can be enjoyed with sparkling water or a soda. TASTING NOTES: Colour: Straw. Nose: Delicate, dominated by the eau-de-vie and with subtle notes of vanilla and pear. Palate: Light, with subtle wood. V.S.O.P. COGNAC
Category: Cognac Degree : 40% vol. For their Merlet VSOP Cognac, Gilles and his sons selected and blended eaux-de-vie from different regions of the cognac appellation, to ensure consistent quality. The eaux-de-vie were aged for at least four years. Most of the Cognacs selected for this blend are from Fins Bois ‘crus’, famed for their fruitiness and their capacity to mature fast when barrel-aged. Cognacs from Petite Champagne bring complexity to the blend. Depending on the blends, other ‘crus’ eaux-de-vie distilled by Merlet can be called upon. The Merlet VSOP Cognac is characterized by intense yet subtle fruity notes, such as peach, and a supple and round palate. SERVICE: The Merlet VSOP is a riche cognac, to be enjoyed straight or in a cocktail as the Horse’s neck or the Cognac Collins. TASTING NOTES: Colour: Light brown with amber hue. Nose: Delicate and subtle, with intense fruitiness. Notes of white fleshed fruits and peach. Palate: Round and supple, with a very fruity finish. X.O. COGNAC Category: Cognac Degree : 40% vol. The Merlet XO Cognac is the classic par excellence for lovers of old eaux-de-vie. It’s round and warm, extremely elegant. Gilles and his sons Pierre and Luc produce this blend with very old cognacs (aged for at least six years) distilled in their stills and matured in the family’s cellars. The Merlet XO Cognac is made with eaux-de-vie from different ‘crus’ of the appellation and offer a rich and fruity aromatic palette, characteristically Merlet. SERVICE: The Merlet XO cognac is enjoyed neat. TASTING NOTES: Colour: Dark brown with golden tinges. Nose: Rich and complex, with an ample aromatic range that goes from orange peel and vanilla to white flowers. Palate: Clean, then round and ample, with fine woodiness. The fruit notes are clear and lasting. SÉLECTION SAINT SAUVANT COGNAC
Category: Cognac Degree : 44.3% vol. Sélection Saint Sauvant is a blend of cognacs from the Merlet family that have reached optimum maturity. Developed by Gilles and his sons Pierre and Luc, fifth generation of Distillateurs Merlet, each blend is unique and produced in limited series. It is the result of an expert and rigorous selection among the cognacs they have inherited from their family’s activity. Each new blend is numbered, a guarantee of the rarity of this exceptional cognac. Bottled in 2016, Blend No. 2 is made of: very old blended cognacs (12%), 10 years old Petite Champagne (30.4%), 10 years old Grande Champagne (10.2%), Fins Bois 2001 (10.7%), Petite Champagne 1993 (10.2%), Fins Bois 1992 (10.1%), Borderies 1984 (4%), blended Petite Champagne 1971 and 1973 (8%) and Fins Bois 1948 (4, 3%). Blend No. 2 is unique and produced in limited series. SERVICE: Merlet Sélection Saint Sauvant cognac, Assemblage n°2 is enjoyed neat. TASTING NOTES: Colour: Orange brown. Nose: Intense and complex, dominated by spices (vanilla, Sichuan pepper and cinnamon) and a slight hint of wood, followed by ripe fruits (apricot, candied orange) and some floral notes (jasmine). Palate: Soft, round and finely wooded. Notes of “rancio charentais” and dried apricots come up in an elegant finish with vegetal notes (linden blossom). |
