Carles Sumarroca is a farmer who, in his own words, "accidentally became an industrialist". He has pioneered sustainable farming techniques and champions viticultural diversity with his vineyards of the world project and his extensive nurseries. Sourced from the vineyards of two estates in the northernmost part of Penedes, the sea-level vineyard of Sabartés is windswept with high concentrations of limestone and clay. Hot, dry summers and cool, wet fall and winter weather are typical for this region.
The Bujonis Cava Brut is made from the traditional cava varieties Xarel.lo, Parellada and Macabeo. All grapes come from the Sabartés Estate in the Penedés area. Only free-run grape juice is used for this cava (approximately 50% of the grape juice). The second fermentation takes place in the bottle according to the traditional method.
