At the heart of Dumangin J. Fils Champagnes, it is a sum of small details that truly sheds light on the terroir and on human work. For Gilles, the profession of winemaker and Cellar Master is above all a skilful mix of addition and precision that allows him to develop wines of character and good allure.
On the Estate, “everything is done as simply as possible” with the purest respect for the grapes, the must, the wine, the terroir, the soil and the plant. Without claiming ownership, the vineyard, made up of 29 plots, is worked in the spirit of organic viticulture. Free spirit by nature, Gilles is keen to be able to become more “reasoned” when his vineyard demands that he be.
Every year, when the song of the galipes rings out in Champagne, there is effervescence on Domaine Dumangin J. Fils. For Gilles and his team, a single watchword prevails: respect for the grapes. It is therefore with all due respect that the bunches are carefully picked by hand and delicately placed in small boxes (16-20 kgs) before being stored in a cool place. An ingenious method that avoids the risk of self-pressing and preserves the natural acidity of the grapes.
Once the harvest is complete, each plot of more than 10/15 ares is carefully pressed in a very high quality press. The musts are then vinified and stored separately in more than 80 stainless steel tanks, a neutral material that preserves the exceptional aromatic richness offered by the Montagne de Reims. Vinification in wood is also used on certain vintages.
Visionary, the free thinker has also stopped since 2012 his malolactic fermentations in order to be able to perpetuate the House's signature: tense, aromatic and biting wines that are easily tasted at any time.
Inhabited by a qualitative requirement which could be summed up in “wines with zero defects, if not nothing”, Gilles is the only master on board in his cellar. Its clear wines are only assembled on the day it decides and are then stored in the cellar for at least 3 years for its non-vintage wines, 9 years for its vintages and more than 10 years for its prestigious masterpieces.
Only disgorged on demand, Gilles also adapts its dosage to his wines as they are made. At each stage of the production process, nothing is the result of chance and like the most beautiful haute-couture creations, the wines of Maison Dumangin J. Fils are unique pieces.
