It is Verum's response to climate change, with varieties that ensure that we can transmit our PHILOSOPHY for many more years, from respect for our origin and the need to discover new territories….
SUBSEQUENT TERRITORIES
The ULTERIOR project was born in 2007 as a trip to the past, a return to ancestral varieties to prepare the future of quality wines in Castilla-La Mancha.
At the end of the last century, a team of researchers from the IVICAM (Vine Institute of Castilla-La Mancha) combed the region to create a catalog of almost extinct autochthonous varieties.
These varieties were planted experimentally and microvinified to see the behavior of the resulting wines.
Bodegas Verum decided to plant some of these varieties and introduce other national ones taking into account parameters such as their PH and the adaptation to the terroir of this historic farm that is located a few kilometers from Tomelloso. Witness of its importance is the presence of one of the largest drums (ancestral construction based on limestone found exclusively in Tomelloso).
Ulterior is the adjective used to describe something that is located beyond in relation to a site or territory . ULTERIOR materializes a project for the future, to anticipate climate change with varieties that adapt and that are making it possible to produce wines with the capacity to transmit an origin, a terroir and a philosophy.
The work in the vineyard is constant, in January, sowing of vegetation cover. February and March with pruning. At the end of April, when the vine begins to sprout, the vegetation cover is integrated into the soil. End of May, green pruning, mid-July, before veraison, green harvest. From mid-August to mid-October, the harvest of the different varieties and by November, organic fertilizer by sectors of the Finca el Romeral.
